BOLGHERI DOC

The first specification dates to August 1983.

The wines that fall under this designation are distinguished by their roundness, softness that is always well livened up by the freshness of the acid component, with an excellent long finish. Even when the structure is strong, the wines are always balanced and harmonious.

Carefully following the specifications, we produce 3 wines: Rosato DOC Bolgheri, Volante Rosso DOC Bolgheri, and Campo al Signore Rosso DOC Bolgheri Superiore.
Tenuta Campo al Signore is the first winery at Bolgheri to have made an UNDERWATER wine in collaboration with the Jamin winery: the first Rosé UnderWater wine in the world, the first wine of Bolgheri designation in history being aged underwater in the sea at – 52 metres.

Rosato DOC Bolgheri

Designation: Bolgheri DOC Rosato

Production Municipality: Castagneto Carducci (Livorno)

Grapes: Merlot and Sangiovese

Alcohol content: 12.5%vol

Yield in litres/per hectare: 5000 litres/ha.

Growing method: Spurred cordon

Harvest period: from the last ten days of August.

Date of placing on the market: April of the year following the harvest year.
Mashing and alcoholic fermentation: grapes are vinified without skins. The destemmed grapes are softly crushed to facilitate the colour transfer and to avoid excessive tannin extraction. After 5 hours, an amount of must is drained off, thus we obtain the characteristic colour and aromas of our Rosato DOC Bolgheri. Alcoholic fermentation is carried out at 16-18°C.

Ageing: Rosato DOC Bolgheri ages on its lees for at least 6 months.

Volante Rosso DOC Bolgheri

Designation: Controlled Designation of Origin

Production Municipality: Castagneto Carducci (Livorno)

Grapes: Merlot 100%

Alcohol content: 14,5%vol

Yield in litres/per hectare: 6000 litres/ha.

Growing method: Spurred cordon

Harvest period: Second ten days of September.

Date of placing on the market: December of two years following the harvest year.

Alcoholic fermentation and mashing: The destemmed grapes are not crushed so that the maximum integrity of the skins is respected. During alcoholic fermentation, frequent punching-down is carried out to favour the extraction of aromas, colour, and tannins from the marc. At the end of maceration, which varies from 8 to 12 days, racking is carried out.

Malolactic fermentation and ageing: After racking, the wine is decanted and undergoes malolactic fermentation. The latter lasts about 10 days and takes place at a temperature of 20°C. Volante Rosso DOC Bolgheri is aged in 500-litre oak barrels; before being launched on the market, it stays into a bottle for 6 months.

Campo al Signore DOC Superiore

Designation: Controlled Designation of Origin

Grapes: Cabernet Sauvignon 50%, Merlot 40%, Petit Verdot 10 %.

Alcohol content: 14%vol

Yield in litres/per hectare: 6000 litres/ha.

Growing method: Spurred cordon

Harvest period: from the third ten days of September.

Date of placing on the market: December of two years following the harvest year.

Alcoholic fermentation and mashing: The destemmed grapes are not crushed so that the maximum integrity of the skins is respected. During alcoholic fermentation, frequent punching-down is carried out to favour the extraction of aromas, colour, and tannins from the marc. At the end of maceration, which varies from 10 to 14 days, racking is carried out. Cabernet Sauvignon and Petit Verdot are vinified with the stems.

Malolactic fermentation and ageing: After racking, the wine is decanted and undergoes malolactic fermentation. The latter one lasts about 10 days and takes place at a temperature of 22°C. CAMPO AL SIGNORE DOC Bolgheri is aged in 500-litre oak barrels; it stays at least 6 months in the bottle before being launched on the market.

Rosato Under Water Wines-UWW

The world’s first underwater rosé wine, the first wine of bolgheri designation in history aged underwater in the sea at a depth of more than 50 metres comes from castagneto carducci and is made by tenuta campo al signore.

Aged for 7 months at a pressure of 6 bar in an underwater cellar using techniques developed by Jamin, an engineering company for underwater ageing techniques for wines and spirits, it ‘lands’ in its first UWW version on 10 June 2022.

Only 888 numbered bottles for the 2022 collection, a deep harmonic wine characterised by underwater ageing, which was and still is also the topic of studies by the Department of Agriculture in Florence

This collection boasts the white UWW guarantee label to indicate that the product has been subject to a true Ageing technique according to the Jamin Underwaterwines models, but it is still adjusting and optimizing the processes which may continue for at least two collections, the aim then being to conclude the application of the techniques and to provide a true UWW Black Label, in other words a constant quality standard over time.
This wine, in this case a 2018 vintage, shows an exceptional brightness and a colour which almost reminds us of Orange wines.

On the nose, an unexpected complexity evokes ripe red fruits, including first of all peach skins, and leads us towards spicy notes that are not at all predictable.

In the mouth, it is soft and elegant with a persistence that, in the retro-nasal, brings us back to the red fruit we found earlier, but which ranges from peach peel to raspberry and small forest fruits almost like a jam; in the middle of the mouth, we find it elegant, soft, and fine.

In the end, one is struck by the excellent acid structure of the hard components such as great sapidity and good freshness, which for a 2018 rosé wine are by no means taken for granted, but which for the original UnderWaterWines are a trademark of their ageing process.

A great product for those who love rosé wines, it is suitable surely to be served at a temperature of about 10-12 degrees, with crudités and fish first courses, especially with shellfishes.

Tenuta Campo al Signore covers an area of 5 hectares and there are typical vines of the DOC Bolgheri designation. With spurred cordon and guyot growing our varieties are Cabernet Sauvignon, Merlot, Sangiovese, Petit Verdot and Cabernet Franc. In the vineyard we apply the principles of organic farming, with certification from 2022, and practices aiming to favour the preservation of biodiversity.

We pick the grapes in an extremely selective manner, during the coolest hours of the day and strictly by hand, selecting the best bunches: we can have up to five different harvests in the field and, within the same vineyard, we carry out scalar harvests, even picking the grapes at three different times.

In our cellar, we vinify each batch of grapes individually and, for those used to make red wines, we have developed a special technique of vinification with stalks. Ageing takes place in 500 l oak barrels.
