Mashing and alcoholic fermentation: grapes are vinified without skins. The destemmed grapes are softly crushed to facilitate the colour transfer and to avoid excessive tannin extraction. After 5 hours, an amount of must is drained off, thus we obtain the characteristic colour and aromas of our Rosato DOC Bolgheri. The alcoholic fermentation is carried out at 16-18°C.
Ageing: Rosato DOC Bolgheri ages on its lees for at least 6 months.
